Blueberry Oatmeal Muffins

Number of Servings: 12

Ingredients

    1 cup rolled oats
    1 cup 2% milk
    1 oz lemon juice
    1 cup all purpose flour
    1 tsp baking powder
    1/2 tsp baking soda
    1/2 tsp salt
    3/4 cup brown sugar (lightly packed)
    1 egg beaten
    1/4 cup butter, melted
    1 cup blueberries

Directions

Add lemon juice to milk (to sour milk). Combine oats with milk and lemon juice and let stand for one hour. Combine flour, baking powder, baking soda, salt and brown sugar in mixing bowl. Stir. Add egg and melted butter to oat mixture. Add to dry ingredients and stir just until all ingredients are moistened. Fold in berries. Spray 12 muffin cups with cooking spray and fill each 3/4 full. Bake at 400 for 15 minutes.
