Chicken Soup by Grandma Totsy

Number of Servings: 16

Ingredients

    48 oz raw chicken
    16 C chicken broth, fate free, no MSG
    1 C Arrowhead Mills brown basmati rice
    1 C celery leaves & tender stalks, chopped
    1/2 C scallions (green onions), chopped

Directions

Place everything in a soup pot. Boil then simmer
about 30 minutes. Skim off any gray foam that floats to the top of broth with a tablespoon. Take out chicken to cool then cut or hand shred into bite size pieces.

Serve immediately or store in refrig until needed.
Freezes well. Makes 16 one cup servings. We freeze it in 2C portions so it's always ready for a snack or part of lucn/dinner.
