Cinnamon muffins

Ingredients

    1 egg
    1/2 cup milk
    1/3 cup canola oil
    1 1/2 cups flour
    1/2 cup sugar
    1/2 tsp baking powder
    1/2 tsp salt
    1/4 cup sugar
    1/2 tsp cinnamon

Directions

Preheat oven to 400
Grease 12 muffin tins
Mix together 1 egg, 1/2 cup milk and 1/3 cup vegetable oil.
Mix together flour, 1/2 cup sugar, baking powder and salt.
Add dry ingredients to liquid ingredients. Stir just to moisten (make sure flour is blended in.
Fill muffin cups 1/2 full. Combine remaining 1/4 cup sugar and 1/2 tsp cinnamon. Sprinkle over the 12 muffin cups.
Bake 15 -20 minutes.
