1 Cup Smart Balance Butter sticks
2/3 cup honey
2/3 cup brown sugar
1/2 cup fat free yogurt
2 cups whole wheat flour ( I used fresh milled)
1 cup white (or bread) flour
2 tsp baking soda
1 tsp cinnimon
2. Add eggs.
3. In a separate bowl mix flours, baking soda and cinnimon.
4. In the blender or mixer, cream bananas and yogurt together until smooth.
5. Alternate adding banana/yogurt and flour mixture into butter mixture.
6. Pour into muffin tins and bake at 350 for 25 minutes.

These muffins are delicious. I used two large eggs... seemed to work fine. I find it hard to believe that these muffins pack as much caloric punch as a fully iced cupcake. In nutritional info, the butter is listed twice. That might be throwing off the calculations? - 4/15/12

Thanks Davidjbrock. You were right, I had listed the butter twice. I changed that, added the eggs to the ingredients list and spelled yogurt correctly! :)
