80 calories a bowl chicken and rice

Introduction

Number of Servings: 12

Ingredients

    6 chicken thighs
    1 head cauliflower
    2 stalks broccoli
    4 stalks of celery
    1 cup matchstick carrots
    4 scallions
    2 cups cooked rice (this recipe was inspired by left-overs, lol)
    tumeric, lemon pepper, sage and salt to taste
    4 cups water

Directions

Put chicken thighs in a crock pot, douse with ground sage and a little salt, and cook on high a couple of hours until it is tender enough to remove from the bone easily. If you leave it too long the bones will start to fall apart into the soup, so don't let that happen.
Remove chicken to a plate to cook for de-boning and skinning.
Chop up all the veggies and throw them in the broth and add a couple of cups of water.
Add remaining spices and stir.
When veggies are about done add the chicken and rice and a couple of more cups of water.
Remember to leave the veggies a little crisp for maximum nutrition!
