Mushroom & Lentil Balls

Introduction

A vegetarian meatball that doesn't have tofu, TVP, or anything artificial in it! A vegetarian meatball that doesn't have tofu, TVP, or anything artificial in it!
Number of Servings: 4

Ingredients

    1/2 cup minced shiitake mushrooms
    1/4 cup minced onion
    1 clove minced garlic
    1 tsp olive oil
    1 tbsp tamari
    1/2 cup cooked lentils
    pinch pepper
    pinch nutmeg
    pinch caraway
    2 eggs
    1/2 cup spelt flour

Directions

Saute mushrooms, onion, and garlic in the olive oil. Add tamari, lentils, pepper, nutmeg, and caraway and then remove from heat. Add the eggs to bind mixture. Form mixture into small balls, dredge in flour, and saute or bake until browned.
