Ingredients

    Olive Oil, Extra Virgin, 2 tbs
    Zucchini, .5 cup, sliced *Peppers, sweet, red, fresh, 1 cup, chopped Yellow Peppers (bell peppers), 1 pepper, large (3-3/4" long, 3" dia) Garlic, 5 cloves Egg, fresh, 1 large *Turkey, Ground turkey, 93% lean, 24 oz panko, 1 cupParmesan Cheese, grated, .5 cup Hunt's Ketchup, 16 tbsp balsamic vinegar, 6 tablespoon Thyme, fresh, 3 tsp Parsley, .25 cup Pepper, red or cayenne, .5 tsp Salt, 1 dashPepper, black, 1 dash

Directions

preheat over to 450. heat oil in large saute pan over high heat. add the zucchini,bell peppers,galic paste and 1/4 tsp of red pepper flakes. season with salt and pepper and cood until vegetable are almoset soft, about 5mins. set aside to cool.2. whisk the egg and fresh herbs in large bowl. add the turkey,panko,grated cheese, 1/2c ketchup, 2 tbs balsamic and the cooked vegetables; mix until just combined. 3. gently press the mixture into a 9-by-5 inch loaf pan. whisk the remaining 1/4 c ketchup, 1/4 c balsamic and 1/4 tsp red pepper flakes in small bowl; brush the mixture over the entire loaf. bake for 1 to 1 1/4 hours. let rest for 10 mins before slicing/
