Applesauce Oatmeal Muffins

Number of Servings: 12

Ingredients

    1 tbsp baking powder
    1 tsp baking soda
    1 cup oatmeal
    3/4 cup whole wheat flour
    2 egg whites
    1/2 cup milk
    1 cup unsweetened applesauce
    1 tsp cinnamon
    2 tbsp ground flax seed
    2 tbsp + 1 tsp canola oil
    1 tsp nutmeg
    1/4 cup dried cranberries
    1/4 cup dried cherries
    1/4 cup raisins


Directions

Combine applesauce, oatmeal, milk, eggs, flax, and oil in one bowl. Combine dry ingredients, including dried fruit, in another. Make a well in the middle of the dry ingredients and add the wet ingredients, stirring until everything is just combined. Fill muffin cups 2/3 full and bake for 15 minutes in a 375 degree oven. Its supposed to make a dozen muffins but I got 14 the first time I made them.
