Introduction

A great low-carb breakfast, but beware - the serving size is small, and the stuff is incredibly addictive, so make sure you measure your portion and hide the rest in an inconvenient place!! Excellent served with cream. Ingredients

    1/4 cup rolled oats
    1/2 cup shredded coconut (unsweetened)
    1/2 cup slivered almonds
    1/4 cup pumpkin seeds
    A pinch of salt
    1 egg white
    1/2 cup chopped low-carb chocolate (I use Well, Naturally Sugar-Free Chocolate)
    1/4 cup dried, unsweetened cranberries
    - I also add a few goji berries for colour

Directions

Preheat the oven to 300°F.

Combine oats, coconut, almonds, seeds, sweetener, and salt and stir until blended. Beat the egg white until thick and stir into the mixture until evenly coated. Spread granola in a shallow baking pan. Bake for 15 minutes, then stir and break apart any lumps. Continue to bake for an additional 15 to 20 minutes or until golden brown. Let cool completely. Stir in the chocolate and cranberries. Serve with cream and additional sweetener, if desired. Store in an airtight container. Makes about 2 1/2 cups.
