Introduction

Very filling, hits the spot! Low Calorie Lunch or Dinner meal!! Add 1 oz of Tortilla chips (about 130 calories) for an even better treat. Still under 500 calories for dinner!!! Ingredients

    2 Pounds 90% or 91% Lean Ground Beef
    One 29 Ounce Can Tomato Sauce
    One 29 Ounce Can Kidney Beans (with liquid)
    One 29 Ounce Can Pinto Beans (with liquid)
    1 Cup Diced Onion
    1 Cup Diced Green Chili or Serrano Pepper
    1 Cup Diced Celery
    4 Medium Tomato, Chopped
    1 Tablespoon Cumin Powder
    4 Tablespoons Chili Powder
    1 Tablespoon of Garlic Powder
    2 Teaspoons Black Pepper
    2 Teaspoons Salt
    3 Cups Water (24 Ounces)

Directions

***Where you can, try to find low sodium beans! It will cut down on the sodium.

Makes 7 Servings of 2 cups each
OR
14 Servings of 1 cups each. If you choose to have only one cup, your nutritional value will cut in half (118.8 calories).

(You may have about 1/2 cup extra, I did when I made this, so I just added it to one serving and had a 1.25 serving)



1. Brown ground beef in skillet, drain off fat.
2. Add beef back to skillet and use fork to crumble beef into small pieces
3. Combine all ingredients into large pot, add beef, stir.
4. Put burner on low heat, and simmer on low heat, stirring every 15 minutes, for 2-3 hours.
5. After cooking and cooling awhile, divide it into 7, 2 cup servings.

*** You can add more chili powder at the end of the 3 hours if you wish to have more spice or flavor. Just let it simmer for about 10 - 15 minutes after you add any spice. It will not hurt the flavor or dish!

You may play with the pepper or green chili amounts if you like it spicier or less spicy.
