Slowcooker Carrot Soup

Introduction

This was great because I could leave it on while I was at work and then finish it when I got home. This was great because I could leave it on while I was at work and then finish it when I got home.
Number of Servings: 6

Ingredients

    1 lb Carrots, cut into bite-sized pieces
    4 Cups Stock (any kind)
    2 Cups Water
    1 Can Evaporated Milk

Directions

Place carrots in slowcooker/crockpot. Cover with stock and water. Cook on low for 8 hours or high for 4 hours until carrots are easily "mashed." After cooking, take half the carrots and "cooked in" liquid and put in a blender. Puree and add half the can of evaporated milk. Repeat with the remaining carrots, liquid, and milk. Combine both pureed batches, stir and serve. Make 6-1 cup servings.
