Easy Vegan Lentil Soup

Introduction

This vegan soup is delicious and filling. It freezes very well. I make it and freeze portions for myself for lunch. This vegan soup is delicious and filling. It freezes very well. I make it and freeze portions for myself for lunch.
Number of Servings: 8

Ingredients

    10 cups water
    2 cups uncooked lentils
    1 large onion, diced
    4 cloves garlic, minced
    large can of diced tomatoes, drain off about half the liquid

Directions

Put the water and lentils into a stock pot, bring to a boil, then reduce heat and simmer, covered, for 2 hours. Add more water if necessary, but usually 10 cups does it for me. In a skillet, saute the onion and garlic in a little nonstick cooking spray. Add to cooked lentils, along with tomatoes. Simmer for another hour.

Season with salt and pepper, if desired.
