1/3 cup maple syrup
1 Tbsp water
1 Tbsp ground stevia
1/2 cup unsweetened applesauce
3/4 cup nonfat milk
2 Tbsp coffee
3 large egg whites
3/4 cup fat-free vanilla yogurt
1 tsp vanilla extract
1 1/2 cup whole wheat flour
1/2 teaspoon sea salt
1 tsp baking powder
1 tsp baking soda
7 Tbsp unsweetened cocoa powder
1/2 cup dried cranberries
Heat oven to 325Â° F.
Prepare muffin pan with muffin liners.
Combine dry ingredients in a large mixing bowl.
In a second bowl, combine wet ingredients.
Stir all ingredients together being careful not to overmix.
Fill the muffin cups 3/4 full.
Bake at 325Â° F for 20 - 25 minutes, or until an inserted toothpick comes out clean.
