Number of Servings: 7

Ingredients

    Portabella Mushrooms, 250 grams, stems no caps, chopped
    Onions, raw, 1 small, chopped
    Celery, raw, 2 stalk, small (5" long), chopped
    Red Wine, 2 fl oz
    Light Cream, 1 cup
    Milk, 1%, 1 cup
    1 teaspoon olive oil
    salt and pepper to taste

Directions

Saute onion and celery in one teaspoon olive oil until tender. Add mushrooms and saute until tender.
Add wine and simmer a minute or two. Add light creams and milk. Season to taste.
Bring to a boil. Using a hand blender, blend until it has a thick consistency. Let it simmer for about 10 minutes.
Correct seasoning. Serve warm with french bread (no included in calorie count).
Gives about 7-8 (1-cup) servings.
