Easy Summer Salad

Introduction

This is my first recipe entered, so I'm sorry if I listed the quantities incorrectly. My husband & I enjoy this salad for lunch often, so I thought I would take the time to enter all the info here and share. Ingredients

    To make the salad for two people you will need:
    12 leaves of romaine lettuce, washed & dried
    3 oz of matchstick carrots, washed & dried
    2/3 of a medium cucumber
    2 Tbsp dried cranberries, (I get mine in the produce section of Walmart) &
    2 Tbsp Sunflower Seeds

    Salad Dressing of your choice, this is not included in the calorie count.

Directions

Wash and chop everything into bite size pieces and place into two bowls. Serve with dressing of your choice. The dressing is not included in the calorie count. Enjoy. We sometimes will add cooked chopped chicken leftover from the previous nights dinner to make it a more filling meal.

    I make this same salad, only I add strawberries. I use Poppyseed dressing, and boy oh boy is it yummy! - 6/10/09
