squash stuffed chicken breast

Introduction

Ingredients

    1/2 cup yellow squash, chopped fine
    1/2 cup zucchini, chopped fine
    1/2 cup green pepper, chopped fine
    1/4 cup red pepper, chopped fine
    1 cup chopped onion
    1 stalk celery, chopped fine
    2 tsps land o lakes light butter with canola
    1 tsp poultry seasoning
    1/4 tsp sage
    1 lb chicken breast, (I used Perdue thin)
    2 oz 2% cheddar cheese
    1/4 cup flour (optional)



Directions

Preheat oven to 350 degrees
saute vegetables in butter until tender, sprinkle with seasonings, turn off heat and add cheese
fill chicken breasts with mixture, roll up and fasten with toothpicks
roll in flour and brown in skillet sprayed with cooking spray
place in baking pan and bake for 30 to 35 minutes
this made 5 servings because there were 5 thinly cut breasts.

  • I think I missed something...when do you add the spices? I felt it was missing something flavor-wise, but loved the idea of getting all the veggies in. - 9/30/08

    I'm so sorry! That's why I don't post most of my recipes, because I always leave something out of the directions. When you saute the veggies, you put the seasonings in with them right at the first.
