Chicken Vegetable Soup

Introduction

I wanted to use up some left over vegetables and came up with this idea. I wanted to use up some left over vegetables and came up with this idea.
Number of Servings: 8

Ingredients

    8 cups low sodium chicken broth
    2 cups raw celery, diced
    2 cups raw carrots, diced
    2 medium onions, diced
    4 medium tomatos, diced
    1/4 cup pearled barley, raw
    fresh parsley, black pepper to taste

Directions

Combine all the ingredients in a pot or dutch oven. Bring to a boil. Turn down to simmer uncovered for 60 minutes or until the vegetables are cooked. Serve hot.
