Fruit and Nut Oatmeal Cookies/Bars

Submitted by: REGIMOM88

Introduction

These cookies are like eating an apple crisp! They're a wonderful snack/treat. They're super healthy, too. For those cutting sugar, try with splenda for baking or brown sugar splenda. They are a bit sweet, so you could cut the sugar by half and they would still be excellent! These cookies are like eating an apple crisp! They're a wonderful snack/treat. They're super healthy, too. Ingredients

    1 c. brown sugar, packed
    .5 c. canola oil
    .5 c. unsweetened applesauce
    1 T. vanilla extract
    1 egg
    2 T. milled flax seed
    1.5 c. whole wheat flour
    .25 t. salt
    .5 t. baking soda
    .5 t. ground ginger
    .5 t. ground nutmeg
    1 T. cinnamon
    2 c. oats, old-fashioned

    .25 c. golden raisins
    .3 c. craisins
    .75 c. chopped pacans, toasted

Directions

Beat sugar, oil, applesauce, and vanilla until well combined. Add egg and mix well. In another bowl, add flax, flour, salt, soda, nutmeg, ginger, and cinnamon; mix well.
