Enchilada Casser-Ole!

Introduction

Found this recipe in Taste of Home Healthy Cooking magazine, but I left out one ingredient I felt was unnecessary (1/4 cup reduced -fat italien dressing) and used 1 cup of extra cheese. Calorie calculation does not include tomato, cilantro or lettuce garnish. Ingredients

    1 lb. lean ground turkey
    1 large onion, diced
    2 cups salsa
    1 can black beans
    2 Tbsp. reduced sodium taco seasoning
    1/2 tsp. ground cumin
    6 flour tortillas (I used Baja Lo-Carb Whole Wheat Tortillas)
    3/4 cup light sour cream
    1 cups shredded reduced-gat Mexican cheese blend
    1 cup Shredded lettuce
    1 med. tomato, chopped
    1/4 cup minced fresh cilantro

Directions

1. In a large skillet, cook turkey or beef and onion over medium heat until meat is no longer pink; drain. Stir in the salsa, black beans, taco seasoning and cumin. Place 3 tortillas in a 2 qt. baking dish coated with cooking spray. Layer with half of the meat mixture, sour cream and cheese. Repeat layers.
2. Cover and Bake at 400 degrees for 25 minutes. Uncover; bake 5-10 minutes longer until heated through. Let stand for 5 minutes before topping with lettuce, tomato and cilantro.
