1 tbsp fennel seeds, crushed
1 tsp chopped fresh thyme
1 tsp chopped fresh rosemary
1 garlic clove, minced
1 tsp salt
1/2 tsp coarsely ground black pepper
1 ( 1lb) flank steak, trimmed of all visible fat
2. Heat a large nonstick skillet or ridged grill pan over high heat. Meanwhile rub the fennel mixture onto both sides of the steak. Put the steak in the skillet and sear until browned, 4-5 minutes. Turn the steak over and cook until done to taste, about 5 minutes longer for medium. Transfer the steak to a cutting board, let stand 5 minutes. Thinly slice steak on the diagonal against the grain.
