Green Poblano Chicken & Rice

Ingredients

8 oz or 2 grilled or baked chicken breast, cubed.
1 1/2 cup low sodium chicken broth
2 fresh poblano chilies, stems & seeds removed, chopped
1 cup cilantro
1/2 cup grated carrot
1/2 cup chopped celery
1 medium onion chopped
1 cup green beans, cut 1 inch long
5 garlic cloves, finely chopped
1 cup brown rice, cooked
1 tablespoon olive oil
Directions
Cook chilies in chicken broth until soft, allow to cool slightly. Transfer chilies and 1/2 cup of broth to a blender, pulse slowly adding cilantro. Blend until smooth.
Meanwhile, cook onion 3-5 minutes, add carrot, celery, green beans & garlic until tender crisp. Add
cooked rice & chicken. Continue cooking adding chili liquid and chicken broth, cook over medium heat stirring until heated through.
A variety of vegetables can be added.
