RR's Valentine Chicken en Croute

Number of Servings: 6

Ingredients

    6 skinless, boneless chicken breasts (18 oz)
    1 Tbs rosemary
    1 tsp olive oil
    S&P
    1.75 oz brie divided into 6 portions
    6 Tbs raspberry fruit spread (organic)
    1 puff pastry sheets thawed (approx.. enough to wrap breasts)
    (egg white and splash water) egg wash

Directions

Season breasts with S&P and rosemary; lightly brown in olive oil.
Roll out and divide puff pastry into 6 sections (one to wrap each breast).
Set breast in center each section of pastry; top with 1/6 brie and 1 Tbs raspberry fruit spread. Wrap pastry into a package. Brush with egg wash. Bake at 400 deg just until pastry is fluffy and golden brown about 15 mins.
