1.5 oz. cream cheese
2 tsp. sugar-free raspberry flavored jello
1 1/2 tbsp. hot water
1 1/2 tsp. unsweetened cocoa
Slightly dampen hands and pinch off a marble sized piece of the cheese mixture and roll into a ball. Do this with the rest of the cheese. Freeze for 30 minutes in a single layer on wax paper.
Mix some extra cocoa and sweetener. Place in a gallon sized zipper bag and add frozen
cream cheese balls. Shake gently to coat. Store in refrigerator in a single layer to prevent sticking.
Whole mixture is just over 1 gram of effective carb inc. coating - and if you share the balls with someone else (but why would you?!), you may get away with only 1/2 carb for dessert! Beware - they're more-ish, but very rich!
