Introduction

I make two differences to this soup
1. I use escarole. I could not find it on the listed foods so I chose one that I thought was similar.
2 I use college in light and free broth. It lessens the sodium by half. I could not find this on the list either.

Ingredients

    olive oil
    white beans
    onion
    garlic
    escarole
    chopped tomatoes
    chicken broth

Directions

Brown onion and garlic in 2 teaspoons of olive oil
drain and add beans.
Chop escarole and boil in water for 20 minutes
add chicken broth to onion and garic and beans
add tomatoes and cook for 10 minutes
add escarole to beans and tomatoes and cook for 20 minutes.
