Orzo Shrimp Stew

Ingredients

    2 - 1/2 Cup Chicken Broth
    5 Cups Broccoli Florets
    1 Can 14.5 oz. Diced Tomatoes
    1 Cup Uncooked Orzo
    1 Lb. Shrimp, Uncooked
    1 Medium Onion, Chopped
    Salt and Pepper
    2 Tsp. Dried Basil
    2 Clove Garlic
    1 Tsp. Red Chili Flakes
    2 Tbsp. Margarine

Directions

1. In large non-stick skillet bring broth to boil.
2. Add broccoli, tomatoes, and orzo
3. Reduce heat and simmer uncovered for 5 minutes, stirring occasionally
4. Add shrimp and salt and pepper
5. Cover and cook for 5 minutes until shrimp turn pink and orzo is tender
6. Stir in basil and margarine
Yield: 4 Servings
