Ingredients

1 pound - Ground Beef 93/7 (93% lean)
1/2 Medium Yellow Onion diced
4 strips Red Bell Pepper diced
4 Strips Yellow Bell Pepper diced
1 cup Mushrooms sliced
1 teaspoon Garlic minced
2 Medium Red Potatoes (baked with skins on and cooled) diced
1 Tablespoon Worcestershire Sauce
Directions
Makes about 5 1-cup servings
In a large skillet with lid, sautee onions, red pepper, yellow pepper, mushrooms and garlic in a little bit of water until onions are translucent and mushrooms are soft. Break up ground beef into pan and brown until done. I have found that by using the 97% lean beef, there is hardly any grease to drain off. Add potatoes and mix until they are heated through and a little browned.
I served this with medium hot chunky salsa and a sprinkle of reduced fat cheese over top and steamed sugar snap peas on the side. (not included in nutrition information)
