Leek and Ham Sauce

Introduction

I use this as an accompaniment to white fish and it goes especially well with seared tuna or salmon I use this as an accompaniment to white fish and it goes especially well with seared tuna or salmon
Number of Servings: 3

Ingredients

    1 x cup chopped leeks
    2 x slices extra lean ham5g Cornflour (Corn Starch)
    250 fl oz (1 cup) water
    1 x tbsp olive oil
    Salt and Pepper

Directions

Heat a saucepan and add olive oil. Once hot add leeks and sweat until soft. Cut ham into small poeces and add to the pot. Add water and bring to the boil. Simmer for a coupe of minutes and add cornflour to thicken remembering to add a little at a time depending on how thick you like your sauce. (This sauce is not meant to be thick and when thickened should coat the back of a spoon as it is meant to be a light accompaniment and not a heavy sauce). Serve over any white fish and especially fresh tuna or salmon steaks.
