Slow Cooker Pot Roast with Cream of Celery Soup

Introduction

This recipe is a slight modification on my Slow Cooker Pot Roast for Two, using cream of celery soup instead of the onion soup. This recipe also stretches your grocery budget because you can buy a 2 lb beef chuck roast and cut it into four smaller roasts to use for four meals. This recipe is a slight modification on my Slow Cooker Pot Roast for Two, using cream of celery soup instead of the onion soup. This recipe also stretches your grocery budget because you can buy a 2 lb beef chuck roast and cut it into four smaller roasts to use for four meals.
Number of Servings: 2

Ingredients

    1/2 lb beef chuck roast
    2-3 medium red potatoes (about 300g), cubed
    15 medium baby carrots, sliced
    1 small onion, sliced and separated into rings
    1/2 can condensed cream of celery soup

Directions

Place cut potatoes & carrots in the bottom of a 2- or 2 1/2-quart Crock Pot. Place roast on top of veggies. Separate onion into rings and lay rings on top of roast, trying to cover as much surface area as possible.
Spread soup over roast and onions.
Cover and cook on low for about 8 hours.
