Trish's Lean Mean Pasta Sauce

Introduction

Healthy doesn't have to mean bland. This sauce is flavor RICH and makes a gob. I freeze it in one cup portions so it can be made in advance, thawed and reheated for a quick lunch or dinner in the time it takes to cook the pasta. This is also a HUGE hit with the whole family. Omit or reduce the salt for a lower sodium sauce. The tomato products can also be substituted for "reduced sodium" versions. Healthy doesn't have to mean bland. Ingredients

    2 (16oz) Honeysuckle White ground turkey
    1 cup chopped onion
    2 cloves crushed garlic
    1 (28 oz) can Hunt's crushed tomatoes
    1 (12 oz) can Hunt's tomato paste
    1 (15 oz) can Hunt's tomato sauce
    2 cups fresh mushrooms
    1/2 cup water
    1 tsp Splenda no calorie sweetener
    2 Tbsp dried basil leaves
    1 tsp fennel seeds
    2 Tbsp italian seasoning
    1 Tbsp salt
    1 tsp ground black pepper
    2 Tbsp dried parsle flakes

Directions

Brown turkey, onion and garlic together (drain of needed). Stir in tomato products, mushrooms and water. Add splenda and all other seasonings. Simmer, covered, for about 1 1/2 hours, stirring occasionally.

Makes 12 1-cup servings.

Serve over whole grain spaghetti noodles or whole grain penne.
