Autumn Harvest Medley
1 lb. carrots, peeled and chopped
1 lb. turnip, peeled and chopped
2 lg. onions, peeled and quartered
4 tbsp. extra light olive oil
1 tsp. cinnamon
1 tsp. salt
Place carrots, turnip, and onions in a large bowl, drizzle with oil and stir to coat. Season with cinnamon, salt, and pepper.
Place vegetables one layer deep in a large baking pan and bake until tender and starting to brown (about 1 hour but depends on how big or small veggies were chopped)
