Chicken Pesto Spirals

Number of Servings: 4

Ingredients

    3/4 cup fresh cilantro
    2 tablespoons pumpkin seeds
    1 tablespoon chopped seeded jalapeƱo pepper
    1/8 teaspoon salt
    1/8 teaspoon black pepper
    1 garlic clove, chopped
    3 tablespoons plain fat-free yogurt
    1 1/2 teaspoons fresh lime juice
    2 boneless skinless chicken breasts.

Directions

Make pesto in the blender: combine everything but chicken. Let it sit or use it right away.

You will need to separate pesto into 4.
Spray a small pyrex pan with pam.
Preheat oven to 375

Pound the chicken breasts as thin as you want.
Use 1 pesto serving down the center of each breast.
Roll the breast, tuck in the ends and secure with tooth picks.
Place seam side down in pyrex.
Take another portion of the pesto and brush on top of the chicken.
Cook for 15 minutes
Turn the breasts
Brush last pesto portion on top of chicken
Cook for another 15 minutes.

Might need more time on the chicken (took me an extra 15 - but I also let it sit in the fridge for an hour prior to cooking)

Make sure meat thermometer says 170 before you eat!

Cut each breast in half and serve.

Enjoy!
