Spinach Stuffed Tilapia with Fire Roasted Tomatoes

Ingredients

Fresh Baby Spinach, 4 cups
Fresh Mushrooms, chopped, 2 cups
Muir Glen Fire Roasted Tomatoes, 2 cans
Parmesan Cheese, 1 cup
Garlic to taste
Salt and Pepper
3.5 oz tilapia steaks, 4
Directions
Skillet fry mushrooms in fat free cooking spray until tender, add spinach and garlic. Cook until spinach is tender, but still brightly colored.
Salt and pepper tilapia steaks to taste. Roll the spinach mixture inside the tilapia steaks and place seam side down into baking pan. Cover with tomatoes and parmesan cheese.
Bake 20-25 minutes until fish is flaky.
Serve hot.

I thought the recipe looked good in theory, but when I made it, I found it to be rather bland and in need of a lot of spice doctoring to make it worth making again. However, it had a beautiful presentation and I probably will make it again, but this time with a surplus of italian seasonings. - 4/27/10
