Quick Eggplant for 2

Introduction

This is quick and easy, combine all in one loaf pan and stick in the oven. Serve with a salad and a whole wheat roll. Lots of protein and fiber. This is quick and easy, combine all in one loaf pan and stick in the oven. Serve with a salad and a whole wheat roll. Lots of protein and fiber.

Ingredients

    1 medium sized eggplant
    1 large tomato, diced
    1/4 cup of seasoned bread crumbs
    2 oz of part skim milk mozarella cheese
    1/2 teaspoon of garlic powder

Directions

Preheat oven to 400 degrees.
Spray loaf pan lightly with cooking spray.
Peel eggplant and dice into about 1/2 inch cubes and toss into loaf pan. You want the juice of your large tomato so dice the large tomato over the loaf pan. Sprinkle the garlic powder over all and toss together lightly. Sprinkle the breadcrumbs over the top and then top with the 2 oz of mozarella cheese. Place into oven for about 45 minutes or until eggplant is tender. Makes 2 servings. Serve with a salad and whole wheat roll.
Breadcrumbs are optional but you'll probably want to add more seasonings as that is where my seasoning comes from.
Sometimes I use a canned of seasoned diced tomatoes for more flavor.
