3/4 Cup Quick Cooking Oats
1/2 Cup 2% Milk (or skim)
1/4 Cup chopped Onion
2 Pds. Ground Extra Lean Turkey Breast
1/2 Cup Chopped Bell Pepper
2 Eggs, Beaten
1/4 Cup Ketchup
1/2 Tsp. Salt
1/2 Tsp. Black Pepper
1 8 Oz. Organic Tomato Sauce
In a small bowl, stir together the oats and milk. Chop onion.
In a large bowl combine the turkey, oat mixture, chopped onion, bell pepper, eggs, ketchup, salt, and pepper. Mix just until well combined.
Transfer the mixture to a 9 by 13 in. baking dish, sprayed with Pam. Shape mixture into a loaf about 5 inches wide and 2 1/2 inches high.
Pour the tomato sauce over the meatloaf and sprinkle with the chopped onions.
Bake for 1 hour.
Remove from the oven and sit for 10 mins.
