Italian Ricotta Cream with fruit, lite version

Introduction

The Italian dessert is full fat ricotta cheese blended with a touch of cream, powdered sugar and vanilla, and whipped to a pudding like consistency. This is served with fresh, sweet cherries in their juice, on top.
I like this for a snack or breakfast or dessert.

I don't tend to like this really sweet, however, if you want it sweeter, either add a bit more splenda to the mix, or better yet for flavor, drizzle a bit of honey in with the fruit juice.

Ingredients

    1/2 cup non fat cottage cheese
    2 oz. Silk Plus, enriched with Omega 3
    1/2 cup frozen sweet cherries, thawed
    1/4 cup frozen blueberries, thawed
    1/2 teaspoon splenda
    1/4 teaspoon real vanilla extract
    2 Tablespoons lite whipped cream (optional)

Directions

This is for one serving, it easily doubles or larger.

1. Put the cottage cheese, soy milk, vanilla and splenda into a bowl and using an immersion blender, combine and puree until you get a thick, creamy consistency. --use a little more or less soymilk to your desired creaminess--

2. Defrost the fruit ahead of time and pour this over the cottage cheese mixture, stirring in a little to swirl it and make it pretty. Add a dollap of whipped cream, for a bit of richness on top and enjoy.
