Veggie Stir Fry

Introduction

A simple stir fry for an easy meal or side dish. A simple stir fry for an easy meal or side dish.
Number of Servings: 3

Ingredients

    2 cups of summer squash (yellow and zukkini) cut into slices
    1 cup snap peas
    1/2 cup of frozen peas
    1 cup of carrots sliced or cut in strips (also can use baby carrots)
    1 and 1/2 cup water
    3 tbsp Kikoman teriyake sauce

Directions

Makes approx 3 one cup servings.

Prepare veggies to be cooked. Poor water into skillet or Wok and heat on med high heat. Add veggies slowly and cover. Turn heat to med low and allow to simmer for 6 to 8 minutes. Uncover and stir to be sure nothing is sticking. Add teriyake sauce to veggies and stir in. Place lid back on for 2 to 3 minutes. Uncover and stir and serve. This can be made with a whole grain rice and served as a meal.
