Chicken with Vegetables

Ingredients

    Chicken Breast, no skin, 4 breast, bone and skin removed
    Zucchini, baby, 3 medium
    *Tomato products, Hunts Diced Tomatoes w/ Basil, Garlic, and Oregano, 1 can
    1 Yellow Bell Pepper
    Spinach, fresh, 1 cup
    Olive Oil, 1.5 tbsp
    Spices: garlic salt, onion powder, Italian seasoning, rosemary and pepper to taste

Directions

1) Cut chicken into an inch/inch and a half pieces
2) Heat up olive oil and add chicken pieces.
3) While chicken is cooking cut yellow bell pepper, 3 zucchinis
4) Add 1 can of deiced tomatoes (with sauce), yellow bell peppers and zucchinis to the pan
5) Let cook for about 10 min and add spinach
6) I use the following spices: garlic salt, onion powder, Italian seasoning, rosemary and pepper to taste
7) Cook for 20 min and serve over rice, pasta or couscous.
This dish is quick to prepare and my family loves it. The variations are welcomed, you may add other vegetables to the mix… for example baby red potatoes.
