Soba Noodle with Peanut Sauce

This dish features a delicious, spicy peanut sauce to add complexity to earthy mung bean spouts, sweet carrots, cool, crisp cucumbers, and thick-cut soba noodles. Delicious, vegetarian, and packed with nutrition, it sports 19 g fiber and 34 g protein. So enjoy your peanuts! Ingredients

    Japanese Noodles, Soba, 3 oz
    Carrots, raw, 1 cup, strips or slices
    Mung Beans, 1 cup
    House of Tsang Peanut Sauce, 6 tbsp
    Cucumber (peeled), 6 stick (4" long)

Directions

Place soba noodles in boiling water for 4-5 minutes. While noodles are cooking, combine carrots and mung beans in a large bowl. Douse with peanut sauce and mix together. Peel and slice cucumber into sticks, reserving on the side. When noodles are done, drain well. Fold hot noodles into raw veggies and sauce. When well mixed, artfully arange cucumber sticks on top of dish. Enjoy!
