Cinnadoodles

Introduction

An old snickerdoodle, tweaked. I do love my cinnamon. An old snickerdoodle, tweaked. I do love my cinnamon.
Number of Servings: 54

Ingredients

    2 3/4 c. flour
    1 tsp. baking soda
    1 c. butter, softened
    1 1/4 c. sugar
    2 eggs
    1 tsp. vanilla
    2 Tbsp. ground cinnamon
    2 tsp. ground nutmeg

Directions

Preheat oven to 400˚. Sift together flour and baking soda. Set aside. Beat shortening and 1 1/4 cups sugar until light and fluffy. Beat in eggs and vanilla. Stir in flour mixture all at once. Chill dough over night or for several hours for easier handling, and when making cookies don't take all the dough out at once or it will get soft and hard to handle. Combine remaining 1/4 cup sugar with cinnamon and nutmeg. Make approx. 1 inch balls of dough. Place on ungreased cookie sheets 2 inches apart. Bake in preheated 400˚ oven for 8 minutes or until light golden. Cool on wire racks. Makes about 4.5 dozen cookies.
