3 Cheese Baked Macaroni and Cheese

Introduction

Ingredients

    5 oz Dreamfield's low carb or whole grain elbows
    4 oz fat free cream cheese
    4 oz shredded low fat sharp cheddar cheese divided
    4 tsp grated Parmesan cheese
    1/4 cup finely chopped onion
    1 minced clove garlic
    2 tsp olive oil
    pepper to taste

Directions

Set aside one ounce of shredded cheddar for topping. Cook elbow macaroni according to package. While macaroni is cooking, preheat oven to 350 and chop onion and garlic. Spray an oven-safe and microwave safe baking dish with cooking spray for easy cleanup. Put 2 tsp olive oil, onion and garlic into dish. Microwave for 1 minute. Stir cooked macaroni, Parmesan cheese, 3 oz of shredded cheddar and cream cheese into dish. Microwave for 1 - 2 minutes to soften the cheeses for easier mixing. Add pepper to taste and stir to blend all together. Sprinkle remaining 1 oz of cheddar over top and bake at 350 for 20 minutes until top is lightly browned. Serves 4.
