Boston Brown Bread

Number of Servings: 15

Ingredients

    2 cups rye meal
    2 cups whole wheat flour
    2 cups corn meal or corn masa
    1 1/2 tsp baking soda
    1/2 tsp salt
    1 1/3 cups dark molasses
    4 cups soy milk or skim milk
    hot water
    aluminum foil
    one 16 oz coffee can or 1 qt mold or baking dish

Directions

Preheat oven to 375F.
Grease coffee can with butter.
In a large bowl, combine all dry ingredients.
Stir in molasses and milk. Mix to blend.
Fill coffee can (or 1 qt mold or baking dish) with batter. It should fill about 2/3 full.
Cover top of can with foil and seal tightly.
Place can (or mold or dish) in a larger, deep baking dish.
Carefully pour hot water into the baking dish so that the water comes about halfway up the outside of the can. Place in the oven.
Allow bread to steam for 2 hours, check water level after 1 hour and add more ater if needed.
check for doneness by sticking a wooden skewer or knife into the center. It should come out clean.
