Introduction

High protein, veggie friendly main dish. A crust-less version of quiche that can be enjoyed by those with gluten or wheat sensitivities/allergy. Good for breakfast, brunch or dinner and can easily accommodate more/less veggies, egg substitutes, or alternative seasonings! High protein, veggie friendly main dish. Ingredients

    Eggs, cottage cheese (non-fat), spinach (fresh), scallions, crumbled feta, grated cheddar (skim or part-skim), pepper to taste, and paprika for color.

Directions

- Preheat over to 400 degrees
- Whisk eggs and cottage cheese in a bowl, set aside
- Use a medium (approx 9" diameter) oven-safe saute pan
- Saute olive oil, scallions and spinach over medium heat, until spinach wilted
- Turn off heat and add egg-cottage cheese mixture directly into oven-safe pan
- Top with feta and cheddar
- Season with pepper and paprika
- Bake in oven for approx. 20 min until top is browned or center is firm.

  • I would love to try this however, there are no ingridient amounts listed. I cook for 1 to 2 people & have to convert my recipes to a smaller size but, with no amounts it's not possible. Could you please re post this? - 2/20/09
