Introduction

This is the basic recipe for Cake in a Cup when you are short on time and desperately need a chocolate fix. You can make this healthier by using a sugar substitute, using apple sauce instead of oil, and whole wheat flour instead of white. Ingredients

4 tablespoons flour (that's plain flour, not self-rising)
    4 tablespoons sugar
    2 tablespoons baking cocoa
    1 egg
    3 tablespoons milk
    3 tablespoons oil
3 tablespoons chocolate chips (optional) Small splash of vanilla

Directions

1. Get a sturdy coffee mug.
2. Add dry ingredients to mug, and mix well
3. Add the egg and mix thoroughly.
4. Pour in the milk and oil and mix well.
5. Add the chocolate chips (if using) and vanilla, and mix again.
6. Put your mug in the microwave and cook for 3 minutes on high. The cake will rise over the top of the mug, but don't be alarmed!

Let the cake cool off and tip out onto a plate. Cut the cake in half and serve. You can cut into into quarts and serve with custard or ice cream.
