Meredith's Sweet n' Tangy Corn Salad

Introduction

This is the sweet, tangy, salty, delicious summer salad that makes mouths water for seconds.. This is the sweet, tangy, salty, delicious summer salad that makes mouths water for seconds..
Number of Servings: 2

Ingredients

    You will need
    1/8 cup of olive oil
    1/8 cup Balsamic Viniger
    1 cup frozen organic corn
    1/2 tsp of crushed garlic
    1/2 cup of cherry tomatoes
    Salt &pepper to taste
    5 fresh Basil leafs.

Directions

In a large pan, drizzle 2 tbsp of olive oil and saute frozen corn, crushed garlic and salt and pepper for around 10 minutes.

Let corn mixture cool for 10 minutes.

Cut cherry tomatoes and basil into pieces and add to corn mixture. Then mix oil and vinegar to make dressing for salad. Set in fridge for 30 mins to allow the corn to fully absorb the dressing.

YUM!
