Introduction

This is a very lowfat and low sugar dessert (and very delicious too!) This is a very lowfat and low sugar dessert (and very delicious too!)
Number of Servings: 10

Ingredients

    3 eggs
    3/4 cup flour
    1 tsp baking powder
    1/4 tsp ground nutmeg
    1/4 tsp ground cinnamon
    1/4 C + 2 tbsp splenda sugar blend for baking
    2/3 C mashed bananas (approx 2 small)
    1 tsp lemon juice
    powdered sugar

    Strawberry cream cheese filling

    1 1/2 c non-dairy whipped topping
    1/2 C whipped light cream cheese
    1 c chopped strawberries ( or other sweet berry)

Directions

1. Allow eggs to stand at room temp for 30 mins. Meanwhile grease a 15x10x1" in. baking pan. Line bottom of pan with waxed paper or parchment paper; Set aside. In a small bowl stir together foour, baking powder 1/4 tsp salt, nutmeg and cinnamon set aside.

2. Preheat oven to 375 degrees. In a large bowl, beat eggs with an electric mixer on high speed 5 min. Gradually add granulated sugar, beating until well mixed. Stir in mashed bananas and lemon juice. Fod flour micture into banana mixture. Spread batter evenly into prepared pan

3. Bake about 13-15 mins or until top spirngs back whin touched, Immediately loosen edges of cake from pan and turn onto a towel sprinkled wtith powered sugar . Peel off waxed paper.Starting from short side, rol up towel and cake into a spiral. Cool on a wire rack 1 hr. Meqanwhile prepare strawberry cream cheese filling.
In a small bowl beat 1/2 C light cream cheese with an electric mixer until smooth. Add 1/2 C whipped topping and fold until well mixed fold in another 1/2 c topping and chopped berries, stir until smooth.

4. Unroll cake; remove towel. Spread cake with filling to within 1 inch of edges. Roll cake up into a spiral. Trim ends. Cover and chill 2-48 hrs before serving. If desired drizzle with chocolate syrup and garnish with banana slices, whipped topping and a cherry just before serving.
