Egg Noodles - Spelt - 1/8 of recipe

Ingredients

    1 cup of spelt flour
    1 egg
    1 tbs of olive oil (butter or ghee may be substituted)
    water as needed

Directions

Bring a pot of water to boiling while you mix the ingredients well and only add water as needed to make the dough workable. Roll it out until it is very thin. The thinner the better, because it does get bigger when you boil it. Cut it into desired pieces and boil 5 minutes. You can stuff it to make ravioli as well. I usually cut my dough into squares or cut out with a round cookie cutter. Add desired filling based on the size of your ravioli's, and seal the pouches by folding the edges over 1 time and press down on them with a fork.
