Rainbow Vegetable Medley

Introduction

Savory vegetable mixture that you can put on top of almost anything!! Savory vegetable mixture that you can put on top of almost anything!!
Number of Servings: 6

Ingredients

    55 grams green pepper
    55 grams red pepper
    55 grams yellow pepper
    55 grams orange pepper
    100 grams mushrooms
    130 grams spanish onion
    15 oz. diced canned tomatoes
    1/2 tsp oregano

Directions

Chop up all vegetables and stir fry for a few minutes in a non stick skillet.
Add pepper, oregano and tomatoes and simmer for 10 minutes on low heat.
Serves approx. 6 half cup servings.

This dish is great over rice or tossed with pasta. Also works well simmered with chicken or pork.
