Triple Threat Cookies

Introduction

A banana chocolate peanut butter oatmeal cookie that tastes just like a yummy muffin top. A banana chocolate peanut butter oatmeal cookie that tastes just like a yummy muffin top.
Number of Servings: 28

Ingredients

    2 small ripe bananas, peeled and mashed
    1/2 cup crunchy peanut butter
    1/4 cup sugar
    1/3 cup brown sugar
    1 eggs
    1/2 cup whole wheat flour
    1.5 T cocoa powder
    .75 t baking soda
    2 T ground flax seed
    1 cup rolled oats
    1/2 cup Hershey cinnamon chips (optional)*
    1/4 t salt
    *Can replace with 1 t ground cinnamon)

Directions

- Preheat oven to 325 degrees and line cookie sheets with parchment paper.
- Combine peanut butter, sugars, and mashed banana in a mixing bowl.
- Mix in egg.
- Stir together cocoa powder, flour, flax, and baking soda in a separate bowl. Add to peanut butter mixture.
- Stir in oats then fold in the cinnamon chips.
- Drop by rounded tablespoonful onto cookie sheet and flatten dough with a spoon.
- Bake 12-15 minutes, or until bottom of cookie is lightly browned.

Makes 28 cookies.
(If omit cinnamon chips, each cookie has 83 calories)
