Ingredients

2 medium yellow potatoes (or 4 to 5 small red potatoes)
2 chicken breasts, 6 to 8 ounces each, cut into 1/2 inch strips (or 8 to 10 chicken tenders)
1 packet dry onion soup mix
1-1/4 cup water
4 slices Swiss cheese
1 cup canned fried onions
Directions
Preheat oven to 400 F. In a casserole dish, stir together chicken, soup and water. Arrange potatoes on top of chicken in a single layer. Cover tightly with foil. Bake 45 minutes or until potatoes and chicken are done. Top with cheese. Sprinkle with fried onions. Bake for additional 5 minutes.
