Introduction

This is one of my own recipes. It's meant to be a side dish - a one cup serving - simply because it's high in calories and with 9.8 grams of fat, well , I don't think you really want to double that number!
Serve with a large and delicious garden salad and a small serving of chicken breast and you have a great meal.

Number of Servings: 6

Ingredients

    1 tbsp Becel Margarine
    1 tbsp Light Spelt Flour (or regular flour)
    1.25 cups of lactose free skim milk
    2 tsps Dijon Mustard
    80 grams of Old Cheddar Cheese
    20 grams of Parmesan Cheese (the good stuff)
    6 cups of cooked Tinkyada Brown Rice Pasta
    1 cup of diced canned tomatoes
    ground pepper to taste

Directions

Boil water for the pasta. Follow the directions on the package to cook. You'll need 6 cups of cooked pasta and so that may mean buying two packages of brown rice pasta. Make sure it's al dente and that you rinse it well once it's cooked.

Pre-heat oven to 400 degrees and grease a 1.5 L (1.5 quart) baking dish. Set aside.

Melt the margarine in a large sauce pan on low heat. Add flour to make a roux. Slowly add milk to the roux and whisk until smooth.
Add dijon mustard and stir.
Add grated cheeses and whisk until melted and blended.
Add ground black pepper and tomatoes and stir well. Add cooked pasta and blend.
Pour the Mac n' Cheese into the greased baking dish and bake for about 30 mins at 400 degrees or until golden on top.
